This distinctive and award winning hard ewes milk cheese is made by the Fletcher family at Ram Hall farm near Berkswell in the West Midlands. Originally made using a recipe for Caerphilly, Berkswell developed a somewhat different character, closer to Manchego or Pecorino than the Welsh cheese. Younger cheeses possess a sweet creaminess, but after five or so months maturing the cheeses become denser and crumblier in texture and the flavours grow become intense.
