A mellow, subtle and creamy blue cheese handmade on a family farm near Cashel in County Tipperary, Ireland. It starts as a firm textured, crumbly cheese but with ripening it takes on a soft, moist, creamy texture. As it matures, the flavours develop, growing stronger and spicier.
