A modern, firm Cornish cheese with a distinctive and beautiful nettle wrapping. This cheeses pleasingly Cornish sounding name is famously the makers surname spelt backwards. Alan and Jenny Gray used a thirteenth century recipe to create this moist and supple cheese with a light citrus flavour that is most regularly likened to a Caerphilly.
