Also known as ‘Boule de Lille’, this is the French take on a Dutch Gouda. Legend has it that Mimolette was born when France was at war with the Dutch and Louis XIV demanded that French cheese makers produce a Gouda substitute to satisfy his cravings. It is a strikingly visual cheese, even before you get to the vibrant orange interior created by the use of annatto (harmless red food colouring made from a south american seed). The pock-marked, moon-like dusty surface is the work of tiny mites that the French refer to as ‘tiny affineurs’, who help to develop the fruity sweetness, caramel and sometimes peanut flavours.
