A semi soft and almost elastic washed rind cheese with a strong aroma but mild creamy flavour. Made by Comte cheesemakers, Morbier has a characteristic ash seam, a throwback to the days when the the cheese was made with a combination of evening milk, sealed with ash then topped up in the morning.
