Traditional Rennet

The unpasteurised version of Stilton created/revived by Joe Schneider in 2006. Made to the same recipe as Stilton, but with raw milk this cheese undergoes a long slow acidification and is traditionally hand-ladled to produce the a wonderfully full flavoured creamy and rich cheese with a distinctive blue tang. Named after an old name for the village of Stilton found in the twelfth century Lincoln Rolls.
